L'Abbecedario Culinario Mondiale: Thiakry

Eccoci! Ce l'abbiamo fatta. Siamo arrivati in Senegal, quarta tappa del nostro abbecedario e stavolta siamo ospitati da Lenny!

In realtà ci vergogniamo un po' perché questa ricetta è veramente semplice. Però il fatto è che in Senegal non ci siamo mai stati ma qui a Barcellona siamo stati in un ristorante senegalese... A dir la verità diversi super-eroi noti ai Gamberotti sono stati tuttiassiemeappassionatamente in questo ristorante. Il fatto però è che nessuno degli eroi (e sì che sono eroi) ha preso appunti. Così alla domanda "ma cosa abbiamo mangiato?" tutti ricordiamo che erano piatti a base di couscous o riso e che c'erano delle carni, pesce o verdure stufati con delle salse buone. Un po' poco in effetti, ma in realtà questo è anche dovuto al fatto che i nostri comunisti ordinarono un piatto ciascuno e poi hanno provato di tutto un po'. Un po' difficile serbare memoria di tutto, quindi!

Però in tutta questa smemoratezza, Aiu' una cosa la ricordava: il dolce (mica tanto dolce) che neanche le era piaciuto poi tanto... Così quando l'ha trovato nominato tra le ricette tipiche si è detta "per la scienza" e l'ha provato. Dobbiamo anche dire che la versione MuVarA è stata gradita più di quella del ristorante!

La ricetta l'abbiamo trovata da varie parti, alla fine abbiamo scelto questa. Da spagnoli acquisiti quali siamo dobbiamo anche aggiungere che in effetti questa sembrerebbe la risposta senegalese all'arroz con leche :-)

Ingredienti:

  • 200 gr. di couscous
  • 500 gr. di yogurt naturale non zuccherato
  • 1 cucchiaino di estratto di vaniglia
  • Zucchero q.b.

Preparazione:
Preparate il couscous mettendolo in acqua bollente e lasciandolo riposare per 3 minuti. Lasciate quindi raffreddare. A parte mischiate lo zucchero con la vaniglia e lo zucchero, quindi aggiungete il couscous. Mettete in frigo e servite freddo.

Hey! Here we are! We're arrived in Senegal, fourth stop of this wonderful World ABC, hosted this time by Lenny!

Actually, we feel embarrassed because this recipe is very very simple. The fact is that we've never been in Senegal. Anyway, here in Barcelona, we went to a Senegalese restaurant to celebrate a no-farewell (or to not celebrate a farewell!?). Thinking about that, a lot of heroes, well-known to Gamberotti, were there alltogethernow. But (there is always a "but") nobody is able to recall the name of what we eat. So to the question "what had we eaten?", all remember main plates with some couscous or rice with stuffed meat or fish or vegetable, seasoned with some (good) sauces. Not too much, indeed. Actually, we must say that as communists as we are, we ordered different plates and then we share everything. Probably, too much difficult memorize the names, isn't?

In this "forgetfullness", Aiu' remember a dessert (no too sweet) that she don't like so much, actually. So, when she found it in the list of Senegalese recipes, she decided to make it "for the sake of science". We must say that the MuVarA version exceeds the one from the restaurant!

The recipe is very easy to be found, we selected this one. Being almost-Spanish now, we consider this recipe as the Senegalese answer to the arroz con leche :-)

Ingredients:
  • 200 gr. of couscous
  • 500 gr. of natural yogurt, not sugared
  • 1 tsp. of vanilla
  • Sugar q.b.
Method:
Prepare the couscous putting it in boiling water and leaving it to rest for 3 minutes. Leave to cool. Apart mix the sugar with the vanilla and sugar, then add the couscous. Refrigerate and serve cold.

L'Abbecedario Culinario Mondiale di Elastic Woman: Yassa au poulet

Tutti a prendere in giro Uomo in Bagno per i suoi ritardi nel pubblicare ricette dell'abbecedario e la nostra eroina preferita (e ora che non è più la sola, questo aggettivo aumenta di significato!) si fa battere sul tempo da Elastic Woman.


Sì, perché mentre la nostra eroina (la titolare, Aiu') era presa dai suoi giri, la carovana dell'abbecedario si spostava in Senegal, ospitato da Lynne. E sabato Elastic Woman chiese "siamo ancora in Senegal? Allora domani preparo una ricetta.". Detto e fatto! Non siamo mica qui ad appiattire le gobbe ai cammelli (e questo mo' come lo traduco in inglese?)! :-)

La ricetta EW l'ha presa qui.

Ingredienti:
  • 1 petto di pollo 
  • 2 cipolle
  • 4 spicchi d'aglio 
  • 2 carote 
  • 1 cucchiaio raso di mostarda di Dijon
  • 2 limoni 
  • 5 cucchiai di olio
  • 1 bicchiere d'acqua
  • pepe nero
  • sale
  • 1 cucchiaino di peperoncino piccante (opzionale)
Preparazione:
Spremete i limoni in un recipiente ampio, aggiungete le cipolle e l'aglio tagliati finemente. Aggiungete il sale, due cucchiai di olio e il pepe nero. Tagliate il petto di pollo in pezzi e aggiungeteli al condimento. Coprite il recipiente con un foglio di pellicola trasparente e lasciate riposare da 3 a 12 ore. 
Trascorso quel tempo, mettete una padella sul fuoco con un cucchiaio di olio. Togliete il pollo dalla marinatura e passatelo nella padella per farlo dorare. In un'altra padella mettete un cucchiaio di olio, togliete la cipolla dalla marinatura e passatela in padella sino a farla diventare trasparente. Aggiungete quindi la salsa della marinatura e quando sarà calda, aggiungete il pollo, l'acqua, il peperoncino, le carote e la mostarda. 
Lasciate cuocere per almeno 30 minuti.
Servite con couscous o riso, ceci e uva passa.

Everybody joking for the fact that Uomo in Bagno is always late in publishing the recipes for the ABC and our preferred heroine (and now that she's not alone, we have to highlight the adjective!) is beaten by Elastic Woman.


While our heroine (Aiu', the owner of this Trattoria) was all around the world (more or less, just a short trip), the carovane of the Worls ABC was moving to Senegal, hosted by Lynne. Thus, on Saturday, Elastic Woman asked "Are we already in Senegal? So, tomorrow I'll prepare a recipe.". Said and done! We are not here to flatten humps to camels (sorry for the translation!)! :-)

Ingredients:
  • 1 chicken breast
  • 2 onions
  • 4 cloves of garlic
  • 2 carrots
  • 1 tbsp Dijon mustard
  • 2 lemons
  • 5 tablespoons oil
  • 1 glass of water
  • black pepper
  • salt
  • 1 teaspoon hot pepper (optional)
Method:
Squeeze the lemon in a large bowl, add the onions and garlic finely chopped. Add the salt, two tablespoons of olive oil and black pepper. Cut the chicken into pieces and add to the sauce. Cover the container with a sheet of plastic wrap and let stand for 3 to 12 hours.
After that time, put a pan on the heat with a tablespoon of oil. Remove the chicken from the marinade and pass it into the pan to brown it. In another pan, put a tablespoon of oil, remove the onion from the marinade and pass it in the pan until it becomes transparent. Then add the sauce marinade and when it is hot, add the chicken, water, pepper, carrots and mustard.
Cook for at least 30 minutes.
Serve with couscous or rice, chickpeas and raisins.
