L'Abbecedario Culinario Mondiale di Elastic Woman: Chicken parmigiana

È con grande gioia che accogliamo anche per questa tappa australiana dell'abbecedario (ospitata da Haalo) il contributo di Elastic Woman. Sì, sembrerebbe che l'incitamento in seguito alla ricetta indiana, abbia sortito l'effetto desiderato e la nostra EW è tornata a inviare una ricetta alla nostra Aiu', ben lieta di ospitare tanto entusiasmo!

Ingredienti:
  • 4 petti di bollo disossati tagliati fini 
  • sale e pepe nero fresco 
  • 2 tazze di farina, condita con sale e pepe 
  • 4 uova grandi, sbattute con due cucchiai di acqua e condite con sale e pepe
  • 2 tazze di pane grattugiato 
  • 1 tazza di olio extra-vergine d'oliva 
  • salsa di pomodoro (vedere ricetta qui sotto)
  • 1 mozzarella fresca, tagliata a fette sottili 
  • 1/4 di tazza di parmigiano grattugiato 
  • basilico fresco o prezzemolo, per guarnire 
  • Per la salsa di pomodoro: 
    • 2 cucchiai di olio d'oliva 
    • 1 cipolla grande, tagliata finemente 
    • 4 spicchi d'aglio, tagliati finemente 
    • 1 kg. di pomodori maturi
    • prezzemolo 
    • peperoncino tritato fine
    • sale e pepe
Preparazione
Salsa di pomodoro: Mettete la cipolla e l'aglio in una padella e fate soffriggere. Nel mentre pulite i pomodori, tagliateli e triturateli. Quando la cipolla sarà imbiondita. aggiungete i pomodori, un bicchiere d'acqual, sale, pepe e prezzemolo. Mettete a fuoco medio-alto sino a quando comincia a sobollire. Abbassate quindi il fuoco e fate cuocere lentamente per circa 30 minuti. Aggiustate di sale.

Pollo: Preriscaldate il forno a 200 ºC. Mettete l'olio in una padella, quando sarà caldo, mettete il pollo  e friggete su entrambi i lati sinché sarà dorato. Togliete dall'olio e metteteli sopra carta assorbente.
Coprite una teglia con della carta da forno, mettete i petti di pollo e sopra ciascun petto versate la salsa e la mozzarella. Salare e pepare e spolverare il parmigiano sopra.
Fate cuocere in forno per 10 minuti e servite accompagnato di prezzemolo.

Yes, it seems that the exciting welcome for her first participation has obtained as results that EW is back with a new recipe. And we, and in particular Aiu', are very happy for that!

Ingredients:
  • 4 boneless, skinless chicken breasts, pounded thin 
  • salt and freshly ground black pepper 
  • 2 cups all-purpose flour, seasoned with salt and pepper 
  • 4 large eggs, beaten with 2 tablespoons water and seasoned with salt and pepper 
  • 2 cups panko bread crumbs 
  • 1 cup vegetable oil or pure olive oil 
  • tomato sauce (recipe follows)
  • 1 pound fresh mozzarella, thinly sliced 
  • 1/4 cup freshly grated parmesan 
  • fresh basil or parsley leaves, for garnish 
  • For the tomato sauce: 
    • 2 tablespoons olive oil 
    • 1 large Spanish onion, finely chopped 
    • 4 cloves garlic, smashed with some kosher salt to make a paste 
    • 2 (28-ounce) cans plum tomatoes and their juices, pureed in a blender 
    • 1 (16-ounce) can crushed tomatoes 
    • 1 small can tomato paste 
    • 1 bay leaf 
    • 1 small bunch Italian parsley 
    • 1 Cubano chile pepper, chopped 
    • salt and freshly ground pepper
Method:
Tomato Sauce: Heat olive oil in a medium saucepan over medium heat. Add onions and garlic and cook until soft. Add pureed tomatoes with their juices, crushed tomatoes, tomato paste, 1 cup water, bay leaf, parsley, Cubano pepper, and bring to a boil. Season, to taste, with salt and pepper. Reduce heat and cook until slightly thickened, about 30 minutes.

Chicken: Preheat oven to 200 ºC. Season chicken on both sides with salt and pepper. Dredge each breast in the flour and tap off excess, then dip in the egg and let excess drip off, then dredge on both sides in the bread crumbs. Divide the oil between 2 large saute pans and heat over high heat until almost smoking. Add 2 chicken breasts to each pan and cook until golden brown on both sides, about 2 minutes per side. Transfer to a baking sheet and top each breast with some tomato sauce, a few slices of the mozzarella, salt and pepper, and a tablespoon of Parmesan. Bake in the oven until the chicken is cooked through and the cheese is melted, about 5 to 7 minutes. Remove from the oven and garnish with basil or parsley leaves.
